Jam Drops

Jam drop cookies are an old favourite and these ones really hit the spot. They contain warming spices like cinnamon and garam masala which help promote good circulation and leave you feeling warm (you can half the quantity of these spices if you’re unfamiliar with their flavours and want to keep them subtle but the strawberries tone them down anyway). Spelt flour is higher in protein than conventional flour and is also richer in B vitamins and phosphorus, essential for making red blood cells which are needed to transport oxygen throughout the body, critical for energy.

Ingredients

  • 1 cup wholemeal spelt flour
  • ½ cup rice flour
  • ½ teaspoon cinnamon
  • ½ teaspoon garam masala
  • ½ teaspoon baking powder
  • 1 cup shredded coconut
  • ½ cup maple syrup
  • ⅓ cup coconut oil, melted
  • ¼ teaspoon salt

    Jam:
  • 1 tablespoon maple syrup
  • 1 punnet fresh strawberries

Method

  1. Preheat oven to 170°C. Mix dry ingredients together in a bowl and set aside.
  2. In a separate bowl, mix together maple syrup and coconut oil. Add the dry mixture to the wet mixture and stir until well combined.
  3. Combine the jam ingredients in a high speed blender and blend until smooth. Set aside.
  4. Roll tablespoons of the dough into balls. Make hole in the middle of each with your thumb (for the jam) and place on a baking tray lined with baking paper. Spoon a ½ tablespoon of jam into the centre of each drop.
  5. Bake for 15–20 minutes or until golden brown. Cool on a wire rack.
